Suman/budbud recipe




Ingredients:
1 cup glutinous rice 
1 cup purple glutinous rice
1/4 cup granulated sugar
1 tsp salt
2 cups coconut milk/gata
3 slices of ginger(optional)
 banana leaves washed and dry
 steamer
Procedure :
1.soaked the purple rice 24hr.(yes!24 hrs.because the purple rice has very hard texture.now,if you want to eat human right away you can always use the regular glutinous rice or malagkit/pilit.and skip the soaking procedure..just replace the purple with the regular one)

2.combine both rice, in a pot give it a mix  then, add the remaining ingredients.

3.bring your pot to the stove top cook it over medium high heat.until all the liquid has absorbed

4.cover the pot and let the suman mixture sit for 10 minutes.

5.take your banana leaves and put 2 tbsp of the suman mixture.wrap the mixture and fold both ends securely.

6.steam it for 1 hr.(if your using a regular glutinous reduce the steaming to 30-45 minutes)

7.let it sit for 15 minutes before serving.

Sapin-Sapin Recipe

Ingredients: 1 cup Glutinous rice flour 1/2 cup Rice flour 1 cup granulated sugar 2 cups coconut milk 1 cup condensed milk 1/2 cup ube halaya 1/2 cooked sweet potato 1/4 langka slice into strips yellow food coloring purple food coloring Procedure: 1 combine both flour 2 add the coconut milk and condensed milk.mix well using a whire whisk until the batter become smooth and your no loner seeing lumps.lastly add the granulated sugar. 3 divide your batter into 3 parts. 4 on 1 part add the the ube halaya and the purple food coloring mix it well using a kitchen blender to get a smooth batter. 5 on the 2 part of the batter add the cooked sweet potato and the yellow food coloring.and do the same with as you did with the ube 6 the 3 part of the mixture its just gonna be plain 7 with your sapin-sapin mold pour half yellow mixture then sprinkle then, the langka steam(thats gonna be your first layer)steam it for 20 minutes.then pour the next color/mixture you like and steam it again for 20 minutes until.and do same with the plain one by doing this your creating 3 layers.sprinkle it with batik or toasted coconut. enjoy...

How To make Kutsinta

Kutsinta Recipe


Ingredients:
1 cup Glutinous rice
1 cup Regular Rice
2 -1/4 cups Water
2 cups Brown sugar
3 tsp Lye Water
2 tbsp Annatto seeds oil/A(or you can Gel food coloring )

Procedure:
1-Combine both rice wash three times
2-Pour the water and let it soak for 1 hr.
3-After soaking for 1 hr.puree your soaked rice with blender until become smooth
4-Add the rest of the ingredients.starting with Brown sugar whisk until dissolve
5-Grease you mold with shortening then, pour 3/4 full on the mold and steam it for 20 minutes
Serve it with grated coconut or grated cheese

Rice Puto










Ingredients:
2 cups Rice washed 3x
2 cups Whole milk
1 cup Granulated Sugar
2-1/2 tbsp baking powder
4 tbsp melted butter
1 whole egg
Procedure:
1 Pour the whole milk into the washed rice let it soaked for 1 hr.
2 Puree the rice and milk mixture using a blender until it become very smooth consistency
3 Add the rest of the ingredients starting with the baking powder mix it using whire whisk until you no longer seeing lumps
4 Strain the mixture
5Grease the puto molds with shortening or butter
6 Pour the batter into the molds half full
7 steam it for 15 to 18 minutes over medium low heat.

How To make Bingkang Bisaya Oven Version

Bingkang Bisaya Oven Version

Recipe

2 Cups rice Washed
2 -14 0z cans of coconut milk
1/2 cup Brown Sugar
1/2 Granulated sugar
3 tsp Baking Powder
2 Large eggs
10 pcs 4x7 Banana leaves
Procedure
1.cook the coconut milk in the sauce pan let it boil for about 20 minutes stirring constantly
2.after cooking the coconut milk pour it to the washed rice and it it soak for 1 hr.
4.while the rice is soaking  lets cut the banana leaves.cut each of them into a circle shape then, lined it to the baking molds.
5.after 1 hr. puree the rice in a blender until smooth consistency. you also gonna add some of the
ingredients too while in the blender.(you can check my video)
6.Divide you batter into the mold you line with banana leaves
7.Broil it in low heat for 15 to 20 minutes or until the top get golden brown.
8.after broiling turn your oven on into 350 degrees and bake it for 30 minutes or when toothpick inserted comes out cleaned.

how to make bingkang Bisaya steam version

bingkang bisaya steam version








Recipe
2 cups washed uncooked rice
2 large eggs
3/4 cup granulated sugar
1-14 oz can coconut milk
1/4 tsp salt
3 tsp baking powder
baking molds
banana leaves
steamer
Procedure
1. Wash the rice with water twice
2. Pour the 1 can of coconut milk
3. Soak it for 2 hrs
4.While rice is soaking rinse the banana leaves and dry it with kitchen towel or paper towel and cut it into 7 inches wide put it in the microwave for 30 seconds.
5. Cut it into a circle shape to that it will fit into the baking mold. Line each mold with banana leaves
6. Puree the rice using a blender( i use nutribullet)
7. Pour half of the soaked rice into a blender and add the half of the sugar,1 egg puree it until the mixture become smooth
8. Do the rest of the soaked rice then add the remaining ingredients.baking powder, egg, sugar, and the salt
9. Pour 1/2 cup of the mixture into the mold.steam it for 15 minutes.
10.After 15 minutes switch the layers of the steamer if using 2 layers after switching steam for another 10 minutes.If  you only using 1layer of steamer, just steam it for 20 minutes.

Ube with macapuno Ensaymada Recipe



Dough Ingredients
5 cups all purpose flour
1/2 cup granulated sugar
1/2 tsp salt
1 tsp dough conditioner
1-3/4 cup whole warm milk
4 egg yolks slightly beaten
5 tbsp melted butter unsalted
1 tbsp active dry yeast
*Filling*
Ube jam(homemade or store bought)
Macapuno(homemade or store bought)
*toppings*
1/2 cup butter softened
1/2 granulated sugar
and grated Cheese(i use babybel cheese)
* For the dough procedure*
1sprinkle 1 tbsp of granulated sugar to the warm milk.then,follow the yeast stir, set it aside.
2 mix all dry ingredients .
3 in the breadmachine bucket pour half of the flour mixture
4 pour the milk & yeast mixture then the remaining of the flour. add the rest of the liquid which is the melted butter and the egg yolks.
5.turn the bread machine on the dough cycle
6 after the machine knead the dough.let it rise for 1 hour before dividing it.
7 after 1 hour punch the dough down to get rid of air and the divided it into your desired size i weigh mine 50 oz each
8 with a rolling pin flatten the dough long and thin.like 1/8 of an inch thick and like 8 inch long then spread the ube filling then the macapuno.
9.fold the dough sealing each side.
10.coil the dough and put it into the endsaymada mold i lined mine with muffin liner if you don't have liner you can just spray it with cooking spray.
11.let the ensaymada rise again for 1.5 hr.to 2 hours or until it doubled in size.
12.after 2 hour preheat your oven to 350 degrees.
13.before baking brush each ensaymad with egg wash.1 egg diluted in 1 tbsp milk then whisk it
14 bake it for 15 to 18 minutes.
15.after baking let it cool down before putting the toppings(buttercream and the grated cheese)
16.if you like you can wrapped them individually with Glad press and seal.

How to Make Filipino Choco German Bread

Filipino Choco German Bread

This bread is similar to the cheese Bread (different version) the only different is the filling
For the dough we need
4 1/4 cup all purpose flour
1 tsp dough conditioner
1/2 tsp salt
1/2 cup granulated sugar
2 1/4 tsp active dry yeast
 1 1/4 cup warm whole milk
3 drops of yellow food coloring(optional)
3 tbsp unsalted butter melted
3 egg yolks slightly beaten
For the filling
1 cup fine crushed ritz Crakers
1 cup packed brown sugar
1/4 cup all purpose flour
1/4 cup cocoa powder
4 tbsp melted butter unsalted
for the toppings
1/4 cup all purpose flour
1/4 cup graham crackers finely crushed
1/4 cup granulated sugar
1/4 cup star margarine
Procedure Bread Machine
1-Sprinkle 1tbsp of sugar into the warm milk give it a stir then follow the active dry yeast stir again and then set it aside.
2-mix all dry ingredients
3-in the bread machine bucket pour half of the flour mixture and then follow the yeast and milk mixture.and then the remaining of the flour mixture
4-turn the machine on the dough cycle when the dough finish kneading let it rest for 1 hr.
To make the filling
1-combine all dry ingredients into a bowl
2-mix using your hand then add half of the melted butter  and continue mixing and then pour the rest of the melted butter.
for the topping
1-combine all dry ingredients then add the star margarine and then mix it with your hand until you can no longer see the margarine.
Lets make the bread
1-divide your dough into your desired size i weigh mine 45 oz each
2-with rolling pin flatten the dough into 1/4 inch thick and 3 to 4 inch wide
3-take 1 tbsp full filling and spread it a little bit into the flatten dough
4-pinched each side and roll
5-roll it into the topping
6-do this to all the divided dough and let it rise again for 1 hr.or until it double in size
7-after hr.preaheat your oven to 350 degrees and bake it for 15 minutes.

How to make filipino cheese bread (different version)

Filipino Cheese Bread Recipe (different Version)



This recipe is similar to pandesal that i posted here.the only thing difference is i added food coloring to achieve the yellow color.


Recipe for the Dough

4 1/4 cup all purpose flour
1 tsp dough conditoner
1/2 tsp salt
2 1/4 tsp active dry yeast
1/2 cup granulated sugar
1 1/4 cup warm whole milk
3 tbsp unsalted butter melted
3 egg yolks
3 drops of yellow food coloring(i use gel)
For the toppings:
1/2 cup all purpose flour
1/2 cup graham crackers finely crushed
1/2cup granulated sugar
1/2 cup star margarine you can use butter here if you don't have star margarine i just like to get the a little authentic here :)
1 drop of food coloring

Procedure:
1-take 1 tbsp granulated sugar and sprinkle it to the warm milk whisk it then, add  the food coloring then the yeast, and set it aside.
2-combine all dry ingredients.which is sugar, salt & dough conditioner
3-in the bread machine bucket pour half of the flour mixture
4-follow the yeast mixture, the remaining of the flour and the rest of the wet ingredients.which is the butter and the egg yolks
5-put the bucket back into the bread machine and let the machine need the dough
6-when the machine finish let the dough rest for 1 hr.
7-after the dough resting punch it down and divide it into your desired size(i weigh mine 45g each)
8-roll each dough into a ball and then, roll it into the toppings mixture
9-roll the dough in between of your palm to adhere the toppings
10-let it rest again for another 1 hr.
11-after the dough rested for the second time pre heat your oven to 350 degrees and bake it for 15 to 18 minutes.enjoy

How to make Filipino Star Bread

filipino Star Bread Recipe



For the ingredients

4 cup all purpose flour
1/2 cup granulated sugar
1/4 tsp salt
1/4 cup powdered milk
1 tsp active dry yeast
1 cup warm whole milk
1 whole egg slightly beaten
2 tbsp vegetable shortening
we also gonna need
2 tbsp melted butter for brushing
1/2 granulated sugar for dipping
Procedure
1.Spinkle 1 tsp of granulated sugar to the warm milk then stir add the yeast and set it a side until bubbles
2. Combine all dry ingredients
3.in  the bread machine bucket pour half of the flour mixture.then add the yeast and the remaining of the flour. Lastly add the egg.
4. Let the bread machine knead the dough for you
5. When the machine is done kneading.let the dough rise for 1hr.
6.after 1 hr divide your dough into your desired size i weigh mine 50 oz each and i was able to make 20 pcs.
7. Shape each dough into shape of a ball.and let the dough rest for another 30 minutes.
8. After 30 minutes pre-heat your oven 350 degrees
9. With your kitchen scissor  make a X cut the top of each dough  with at least 1/2 inch deep so that the top will look like a Star.
10. Brush it with the melted butter and carefully dip it into the granulated sugar
11. Bake it for 15 to 18 minutes or until the top is a little bit golden brown.

5 cups all purpose flour
1/2 tsp.salt
1 tsp dough conditioner
3/4 cup granulated sugar
1 tbsp active dry yeast
1-1/2 cup warm whole milk
3 whole egg slightly beaten
4 tbsp melted butter
1 block of eden cheese
1whole egg beaten diluted in 1 tbsp milk for brushing

Procedure:
1-sprinkle 1 tbsp of sugar into the warm milk stir and add the yeast.set it aside
2-combine the dry ingredients
3-in the bread machine bucket pour half of the flour mixture and then add the yeast mixture
add the remaining flour.
4-add the rest of the wet ingredients which is eggs and the melted butter
5-turn on the bread machine at the dough cycle.
6-after the machine knead the dough.let the dough rise in the warm place covered for about 1 hr or until it double in size.(or you can leave the dough in the bread machine )
7-greased your work surface or spray with cooking spray.
8-after 1 hr.deflate the dough and divide it into equal size i weigh mine(45 oz)i was able to get 33 pcs
9-slightly flatten the dough and put the cheese in the middle roll and pinched each side 
10-let it rise again for another 1 hr.
11-after the dough has risen at the second time pre heat your oven into 300 degrees brush with the egg wash before baking.and bake for 20 minutes.enjoy:)

Spanish bread recipe


ingredients:
4 cups of all purpose flour
2-1/2 cup bread flour
2 tsp dough conditioner(optional)
1 tsp salt
1 tbsp active dry yeast
2 cup warm whole milk
6 tbsp melted butter unsalted
6 egg yolks
1/2 cup sugar
for the spanish bread filling
2 cups fine ritz cracker(original)
1 cup light brown sugar(packed)
5 tbsp.melted butter unsalted
to make it
just combine them all and mix it until it form like a wet sand

procedure for the dough(or just watch the video)
1-take 1 tbsp of granulated sugar and sprinkle it to the warm milk and then,follow the active dry yeast  and stir.set it aside
2-mix all dry ingredients
3-in the bread machine bucket put half of the flour mixture and then,pour the yeast mixture and pour the rest of the flour.add the egg yolks and the melted butter.
closed the lid and press the dough button
4-after the machine knead the dough you can leave it there or you can transfer it to the greased bowl and cover it and put it in a warm place.let the dough rise for 1 hr.
5.after the dough has risen.punched down.
6.spray your work surface with cooking spray to prevent the dough from sticking
7-divide your dough into equal size (i weigh mine 45 grams each)
flatten the dough about 1/4 of an inch thick then take 1 tbsp of the filling and spread roll the dough and pinched it to seal it.when your done cover it and let it rise again for another 45minutes to 1 hr.
8-pre heat your oven at 350 and bake it for about 15 to 18 minutes depending in your oven.

how to make pulpit/shakoy

Pilipit/Shakoy Recipe

Ingredients:
2-1/2 cup all purpose flour
1/4 tsp salt
1 tsp active dry yeast
1 tbsp granulated sugar
1/4 cup warm water
1/2 cup warm milk
3 tbsp melted butter
1 egg slightly beaten
oil for frying
1/3 cup of granulated sugar for coating

Procedure:
1-Take 1/2 tsp of granulated sugar and sprinkle it to the warm water and stir follow the yeast and stir again let is rest for 5 minutes
2-combine all dry ingredients which is four,salt and sugar
(guys i always use my bread machine for kneading the dough but if you don't have one just knead it with your hand until smooth and elastic)
3-on the bread machine bucket pour the yeast mixture follow the milk,flour,the melted butter and the egg.close it and press the dough cycle let the machine do the kneading.
4-when its done you can leave the dough inside or you can take it out and put it in the greased bowl and cover it let it rise for 1 hour or until it double in size.
5-after 1 hr.take the dough out and flattened it and divide it into a desired size
6-roll the dough until long enough to make a twisted braid.do this into all the divided dough
7-let the dough rest for 1/2 an hr.
8-while it resting prepare the oil for frying.
9-put 4 cups of vegetable oil in the heavy pot(i use cast iron pot here)
10-fry the pulpit/shakoy until golden brown
11 to coat a sugar the best way to do is put 1/3 cup of granulated sugar into a ziploc bag then,put 3 pulpit/shakoy at a time.the shake until it well coated.

How to make pandesal


Pandesal recipe


3- cups all purpose flour
1 1/4 -cup bread flour
1- tsp dough conditioner
1/2- tsp salt
2 1/4- tsp active dry yeast
1/2-cup granulated sugar
1 1/4-cup warm whole milk
3-tbsp unsalted butter melted
3-egg yolks slightly beaten
bread crumbs
Procedure:
1-sprinkle 1 tsp of granulated sugar into warm milk.then add the yeast stir and set it aside
2-combine the both four and the rest of the dry ingredients
3-in your bread machine pour in the milk and yeast mixture 
4-follow the flour mixture
5-add the egg yolks and melted butter
6-turn  on your bread machine the dough cycle let the machine need the dough for you :)
(if you don't have one you can use your hand to knead the dough)
when the machine has finish you can just leave it there(i leave mine inside the machine)or you can transfer it into a bowl and spray or oil it and cover your dough and let it rest for atlas an hour
7-after an hour punched your dough down and cut it into your desired size(i weigh mine so i can get into an equal size 30 oz each and i got 27 pcs.)
8-so roll your dough and shape it into a ball
9-after you roll all of them put it in the baking pan and let its rest for about 45 min-1 hour
10-preheat your oven at 350 and bake your pandesal of 12-15 minutes

Binangkal Recipe (updated)



Ingredients:
3- 1/2  cup All purpose flour
1/2 tsp Baking soda ( for the crispy skin)
1/2 tsp salt
1/4 tsp Baking powder( helps to get cracked)
1 cup packed light brown sugar
1 tsp active dry yeast ( for soft inside)
1 1/2 tbsp vegetable shortening/oil
1 1/4 cup whole milk warm(not too hot you don't wanna kill the yeast)
sesame seeds for coating
5 cups vegetable oil for frying


Procedure:

1) Combine the flour, baking soda, Baking powder and salt. Add in the sugar, yeast,the milk and shortening. Mix until the all the flour is well combine, set it aside cover for 20 minutes.

2) Add the oil into the pot/deep frying pan. Turn the heat over medium low heat.

3) Shape the dough take a golf ball size dough and shape it like ball, roll the dough ball into the sesame seeds. Once the dough is coated with sesame seeds shape it again by rubbing it in between of you palm so that the sesame seeds will adhere into the dough. do this to the rest of the dough.

4) Fry the binangkal for about 6-7 minutes or until its golden brown. flip the binangkal if need to make sure it cook evenly. Once its golden brown remove it from the heat.

1/2 cup rice flour
1/2 cup granulated sugar
2 tsp Baking powder
1/4 tsp salt
1/4 cup ube halaya
1 1/4 cup fresh milk
1 tsp ube flavoring
2 tbsp melted butter
1-2 drops of food coloring(i used gel food coloring)


Procedure
1.prepare you steamer
2.greased you puto mold(you brush it with melted butter or spray it with cooking spray)
3.mix all dry ingredients
4.add the ube halaya
5.mix all the wet ingredients
6.then pour it to the flour and use mixture
7.mix it well until smooth
8.pour you put mixture into you prepared put molds
9.steam it for about 15 to 18 minutes.
 you can topped it with slice cheese of you choice (this step is optional)
