Spanish bread recipe


ingredients:
4 cups of all purpose flour
2-1/2 cup bread flour
2 tsp dough conditioner(optional)
1 tsp salt
1 tbsp active dry yeast
2 cup warm whole milk
6 tbsp melted butter unsalted
6 egg yolks
1/2 cup sugar
for the spanish bread filling
2 cups fine ritz cracker(original)
1 cup light brown sugar(packed)
5 tbsp.melted butter unsalted
to make it
just combine them all and mix it until it form like a wet sand

procedure for the dough(or just watch the video)
1-take 1 tbsp of granulated sugar and sprinkle it to the warm milk and then,follow the active dry yeast  and stir.set it aside
2-mix all dry ingredients
3-in the bread machine bucket put half of the flour mixture and then,pour the yeast mixture and pour the rest of the flour.add the egg yolks and the melted butter.
closed the lid and press the dough button
4-after the machine knead the dough you can leave it there or you can transfer it to the greased bowl and cover it and put it in a warm place.let the dough rise for 1 hr.
5.after the dough has risen.punched down.
6.spray your work surface with cooking spray to prevent the dough from sticking
7-divide your dough into equal size (i weigh mine 45 grams each)
flatten the dough about 1/4 of an inch thick then take 1 tbsp of the filling and spread roll the dough and pinched it to seal it.when your done cover it and let it rise again for another 45minutes to 1 hr.
8-pre heat your oven at 350 and bake it for about 15 to 18 minutes depending in your oven.

how to make pulpit/shakoy

Pilipit/Shakoy Recipe

Ingredients:
2-1/2 cup all purpose flour
1/4 tsp salt
1 tsp active dry yeast
1 tbsp granulated sugar
1/4 cup warm water
1/2 cup warm milk
3 tbsp melted butter
1 egg slightly beaten
oil for frying
1/3 cup of granulated sugar for coating

Procedure:
1-Take 1/2 tsp of granulated sugar and sprinkle it to the warm water and stir follow the yeast and stir again let is rest for 5 minutes
2-combine all dry ingredients which is four,salt and sugar
(guys i always use my bread machine for kneading the dough but if you don't have one just knead it with your hand until smooth and elastic)
3-on the bread machine bucket pour the yeast mixture follow the milk,flour,the melted butter and the egg.close it and press the dough cycle let the machine do the kneading.
4-when its done you can leave the dough inside or you can take it out and put it in the greased bowl and cover it let it rise for 1 hour or until it double in size.
5-after 1 hr.take the dough out and flattened it and divide it into a desired size
6-roll the dough until long enough to make a twisted braid.do this into all the divided dough
7-let the dough rest for 1/2 an hr.
8-while it resting prepare the oil for frying.
9-put 4 cups of vegetable oil in the heavy pot(i use cast iron pot here)
10-fry the pulpit/shakoy until golden brown
11 to coat a sugar the best way to do is put 1/3 cup of granulated sugar into a ziploc bag then,put 3 pulpit/shakoy at a time.the shake until it well coated.

How to make pandesal


Pandesal recipe


3- cups all purpose flour
1 1/4 -cup bread flour
1- tsp dough conditioner
1/2- tsp salt
2 1/4- tsp active dry yeast
1/2-cup granulated sugar
1 1/4-cup warm whole milk
3-tbsp unsalted butter melted
3-egg yolks slightly beaten
bread crumbs
Procedure:
1-sprinkle 1 tsp of granulated sugar into warm milk.then add the yeast stir and set it aside
2-combine the both four and the rest of the dry ingredients
3-in your bread machine pour in the milk and yeast mixture 
4-follow the flour mixture
5-add the egg yolks and melted butter
6-turn  on your bread machine the dough cycle let the machine need the dough for you :)
(if you don't have one you can use your hand to knead the dough)
when the machine has finish you can just leave it there(i leave mine inside the machine)or you can transfer it into a bowl and spray or oil it and cover your dough and let it rest for atlas an hour
7-after an hour punched your dough down and cut it into your desired size(i weigh mine so i can get into an equal size 30 oz each and i got 27 pcs.)
8-so roll your dough and shape it into a ball
9-after you roll all of them put it in the baking pan and let its rest for about 45 min-1 hour
10-preheat your oven at 350 and bake your pandesal of 12-15 minutes

Binangkal Recipe (updated)



Ingredients:
3- 1/2  cup All purpose flour
1/2 tsp Baking soda ( for the crispy skin)
1/2 tsp salt
1/4 tsp Baking powder( helps to get cracked)
1 cup packed light brown sugar
1 tsp active dry yeast ( for soft inside)
1 1/2 tbsp vegetable shortening/oil
1 1/4 cup whole milk warm(not too hot you don't wanna kill the yeast)
sesame seeds for coating
5 cups vegetable oil for frying


Procedure:

1) Combine the flour, baking soda, Baking powder and salt. Add in the sugar, yeast,the milk and shortening. Mix until the all the flour is well combine, set it aside cover for 20 minutes.

2) Add the oil into the pot/deep frying pan. Turn the heat over medium low heat.

3) Shape the dough take a golf ball size dough and shape it like ball, roll the dough ball into the sesame seeds. Once the dough is coated with sesame seeds shape it again by rubbing it in between of you palm so that the sesame seeds will adhere into the dough. do this to the rest of the dough.

4) Fry the binangkal for about 6-7 minutes or until its golden brown. flip the binangkal if need to make sure it cook evenly. Once its golden brown remove it from the heat.
