Ube with macapuno Ensaymada Recipe



Dough Ingredients
5 cups all purpose flour
1/2 cup granulated sugar
1/2 tsp salt
1 tsp dough conditioner
1-3/4 cup whole warm milk
4 egg yolks slightly beaten
5 tbsp melted butter unsalted
1 tbsp active dry yeast
*Filling*
Ube jam(homemade or store bought)
Macapuno(homemade or store bought)
*toppings*
1/2 cup butter softened
1/2 granulated sugar
and grated Cheese(i use babybel cheese)
* For the dough procedure*
1sprinkle 1 tbsp of granulated sugar to the warm milk.then,follow the yeast stir, set it aside.
2 mix all dry ingredients .
3 in the breadmachine bucket pour half of the flour mixture
4 pour the milk & yeast mixture then the remaining of the flour. add the rest of the liquid which is the melted butter and the egg yolks.
5.turn the bread machine on the dough cycle
6 after the machine knead the dough.let it rise for 1 hour before dividing it.
7 after 1 hour punch the dough down to get rid of air and the divided it into your desired size i weigh mine 50 oz each
8 with a rolling pin flatten the dough long and thin.like 1/8 of an inch thick and like 8 inch long then spread the ube filling then the macapuno.
9.fold the dough sealing each side.
10.coil the dough and put it into the endsaymada mold i lined mine with muffin liner if you don't have liner you can just spray it with cooking spray.
11.let the ensaymada rise again for 1.5 hr.to 2 hours or until it doubled in size.
12.after 2 hour preheat your oven to 350 degrees.
13.before baking brush each ensaymad with egg wash.1 egg diluted in 1 tbsp milk then whisk it
14 bake it for 15 to 18 minutes.
15.after baking let it cool down before putting the toppings(buttercream and the grated cheese)
16.if you like you can wrapped them individually with Glad press and seal.
