Ingredients:
- 1/2 or 1 stick unsalted softened butter
- 1/4 cup dark brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1/4 cup ube halaya/ube jam
- 1 tbsp ube extract
- 1 & 1/4 cup all purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup white chocolate chips
1)Preheat the oven to 350F and line your baking sheet with parchment paper.
2) In a large mixing bowl, cream the butter using hand mixer, add the egg and the sugar beat until it's well combine.
3) Add the ube halaya and the ube extract.
4) In another bowl, combine the dry all purpose flour, baking soda, and salt.
5) Add the dry ingredients into the mixture. Mix until combine, then add the white chocolate chips in three addition mix using a wooden spoon.
6) Using 1.5 tbsp size ice cream scooper, scoop the cookie dough into the prepared baking sheet, leaving 2 inch apart.
7) Bake for 10-12 minutes (I baked mine for 12 min)
This recipe makes 22 pcs cookies.
